Rohu, Labeo rohita, is a species of fish of the carp family found in rivers across South Asia, including India, Pakistan, Vietnam, Bangladesh, Nepal and Myanmar, and introduced to Peninsular India and Sri Lanka; also known as rui, ruhi, rou or roho labeo. It is a large omnivore extensively used in aquaculture, though when cultured it does not breed in lake ecosystems. It is widely consumed across South Asia, especially in Bangladesh, Bhutan, Nepal, Pakistan and several Indian states, most often fried; a 12th-century Sanskrit text records a recipe for it using asafoetida, salt, turmeric and water.
