Sacha inchi is the seed of Plukenetia volubilis, a perennial climbing plant native to the Amazon rainforest of Peru and neighboring countries. The seeds develop inside a distinctive star-shaped, multi-lobed capsule and have a mild, nutty flavor. They are eaten roasted as a snack, ground into a paste, or cold-pressed into an oil valued for its high concentration of omega-3 alpha-linolenic acid, and have been promoted in recent decades as a commercial health food export from the Peruvian Amazon.
