Sea bass is a common name applied to many species of marine fish across several families, rather than one single species. In Ireland and the United Kingdom it refers specifically to the European seabass, also called branzino, Dicentrarchus labrax, though the spotted seabass may also carry the name; more broadly the name covers fish in families including Serranidae, the sea basses and basslets, Anthiadidae, the anthias and fairy basslets, Epinephelidae, the groupers, Moronidae, the European and striped bass, and Latidae, the Lates perches, among others. The European seabass is a major commercial fish, especially in aquaculture, and Japanese sea bass species are widely used in Japanese, Korean and Chinese cuisine.
