Sobrasada is a raw, cured, spreadable sausage from the Balearic Islands, most closely associated with Mallorca, made from ground pork mixed with paprika, salt and other spices and stuffed into a natural or synthetic casing before undergoing a slow curing and fermentation process rather than cooking. The high proportion of paprika gives the sausage its deep red orange color and mild smoky heat, and because it is never dried hard like a typical salami, sobrasada stays soft enough to spread on bread, often toasted, or melted into other dishes as a cooking ingredient. Sobrasada de Mallorca carries protected geographical indication status within the European Union.
