Souari nut, also called the butternut of Guiana, is the edible nut of Caryocar nuciferum, a fruit tree native to Central and South America. The fruit resembles a coconut in size, with a leathery greyish-brown skin enclosing one to four hard, woody stones set in an oily pulp; the large kernel inside is soft and, according to historical sources, sweeter than the almond, which it somewhat resembles in taste. The kernel is eaten raw or roasted, and the nut also yields an edible, non-drying oil.
