The wahoo is a large mackerel relative found worldwide in tropical and subtropical seas, known in Hawaii as ono. It has an elongated body with an iridescent blue back, silvery sides marked by irregular vertical blue bars, and a large mouth lined with razor-sharp teeth. Wahoo are among the fastest fish in the ocean, capable of bursts near 80 kilometers per hour, which along with their firm, mild-flavored flesh makes them prized by both sport fishermen and cooks; the flesh is commonly grilled, seared or used raw in dishes such as poke and sashimi.
