Whitefish

Whitefish most commonly refers to species of the genus Coregonus, freshwater fish found in cold lakes and rivers across North America and northern Europe, with mild, flaky, pale flesh. In North America it is closely associated with the Great Lakes region, where smoked whitefish is a traditional product especially prominent in Jewish delicatessen cuisine, often served as whitefish salad. The term whitefish is sometimes used more loosely in the fish trade for other mild, pale-fleshed fish generally, but its more specific culinary and biological sense names the Coregonus group.
