Canadian Cuisine

North American Cuisines

Canadian cuisine consists of the cooking traditions and practices of Canada, with regional variances across the country. First Nations and Inuit have practiced their culinary traditions in the land now called Canada for at least fifteen thousand years, and European settlers on the east coast and then across New France, British North America and Canada blended foreign recipes and techniques with Indigenous plants and animals. Modern Canadian cooking values local ingredients and terroir, naming products by their place, as with Malpeque oysters and Alberta beef. Regional emphases include lobster and dulse in the Maritimes, salmon and crab in British Columbia and maple syrup in central Canada.
