Food and Drink Atlas

Open Questions

Things this atlas does not know. Each entry is a question that specialists have posed and not settled, recorded with what would actually resolve it and which expertise the answer needs.

These are kept deliberately, rather than quietly omitted. An atlas that shows only what it is sure of implies a confidence it has not earned, and the gaps are often where the interesting work is. Several sit exactly where two fields fail to meet: identifying the hyssop of the Hebrew Bible needs a botanist and a philologist of Biblical Hebrew, and neither one settles it alone.

Grouped by the part of the atlas the question sits in. Start here if you know the territory better than the technique.

What Would Settle It A food-history source establishing when shiro took shape as a distinct chickpea or broad-bean stew in Ethiopian and Eritrean cuisine.

Expertise Needed food history

Question posed in Shiro (Wikipedia), Lead section.

Samsa When did samsa take shape as a distinct Central Asian pastry?

Open Samsa

Why It Is Open Wikipedia's article on samsa gives its place of origin as Central Asia but carries no History or Etymology section and names no year, century or historical period for when the pastry emerged.

What Would Settle It A food-history source establishing when samsa took shape as a distinct stuffed pastry across Central Asian cuisines.

Expertise Needed food history

Bandeja Paisa When did bandeja paisa take shape as a distinct Antioquia plate?

Open Bandeja Paisa

Why It Is Open The source states there are no references in the food writing about bandeja paisa before 1950 and that it is probably an interpretation of local restaurants of simpler peasant dishes, without naming when it actually took shape as the composed plate now recognized.

What Would Settle It A food-history source establishing when bandeja paisa took shape as the combined plate now served in Antioquia and the Paisa region, prior to its first documented reference around 1950.

Expertise Needed food history

Question posed in Bandeja Paisa (Wikipedia), Whole article.

Beef Wellington What is the true origin of Beef Wellington?

Open Beef Wellington

Why It Is Open No source ties the dish's name or recipe to a single country of origin: the earliest documented recipe under a similar name is the 1891 Austrian Filet a la Wellington, the popular name points to the British Duke of Wellington with an unconfirmed connection, and food historians have also drawn French and Polish links.

What Would Settle It A dated British source using the name Beef Wellington that predates or corroborates the 1891 Austrian recipe, or documented evidence directly connecting the dish to Arthur Wellesley, 1st Duke of Wellington.

Expertise Needed Culinary history

Question posed in Beef Wellington (Wikipedia), Early sources section.

Laghman When and in what period did laghman take shape as a distinct Uyghur dish, apart from its Chinese lamian source?

Open Laghman

Why It Is Open The source names laghman as a likely loanword from Chinese lamian and an adaptation of Northern Chinese noodle dishes, but gives no century, dynasty or decade for when the Uyghur dish diverged from its Chinese source.

What Would Settle It A dated food-history source on Uyghur or Central Asian cuisine naming an approximate period for laghman's emergence as a distinct dish.

Expertise Needed food history

Question posed in Laghman (food) (Wikipedia), Lead section.

Banku In what period did banku take shape as a distinct Ga-Dangme dish?

Open Banku

Why It Is Open The source traces banku's name to the Dangbe phrase "ba mi ku" and describes its ingredients and preparation, but gives no century or period for when the dish itself originated among the Ga-Dangme.

What Would Settle It A dated food-history or linguistic source on Ga-Dangme or Ghanaian cuisine naming an approximate period for banku's origin.

Expertise Needed food history

Question posed in Banku (Wikipedia), Etymology section.

Attieke In what period did attieke take shape as a distinct dish among the lagoon peoples of southern Cote d'Ivoire?

Open Attieke

Why It Is Open The source names the lagoon peoples (Ebrie, Adjoukrou, Alladjan, Abidji, Avikam, Ahizi, Attie) and the Nzema as attieke's origin communities and describes its preparation, but gives no century or period for when the dish itself originated; its December 2024 UNESCO recognition marks a modern heritage milestone, not an origin date.

What Would Settle It A dated food-history or ethnographic source on Ivorian or lagoon-peoples cuisine naming an approximate period for attieke's origin.

Expertise Needed food history

Question posed in Acheke (Attieke) (Wikipedia), Lead section.

Poke How far back does poke's practice of seasoning cut raw reef fish extend within the pre-contact Native Hawaiian period?

Open Poke

Why It Is Open The source places poke's origin in the pre-contact period, before Captain Cook's 1778 arrival, as a longstanding Native Hawaiian fishing practice, but gives no earlier bound or approximate century within that pre-contact era.

What Would Settle It An archaeological or ethnohistorical source on ancient Hawaiian food practices naming an approximate century within the pre-contact period for the origin of raw-fish poke preparation.

Expertise Needed food history

Question posed in Poke (dish) (Wikipedia), History, Pre-contact period section.

Mezcal Did agave distillation exist in Mesoamerica before Spanish contact?

Open Mezcal

Why It Is Open Some archaeological studies, including archaeomagnetic dating of stills at sites in Mexico, have been read as evidence that agave distillation was practiced in Mesoamerica before the Spanish arrived, and one line of research has suggested distillation-related technology may be traceable in the region for as much as twenty five centuries. These claims remain contested, and the dominant scholarly account still credits the Spanish colonial period with introducing true distillation to Mexico, drawing on techniques the Spanish themselves had learned from Moorish alchemical tradition.

What Would Settle It A dated residue analysis directly confirming ethanol distillation, rather than a still-shaped vessel used for another purpose, from a securely stratified pre-contact Mesoamerican context, matched against equivalent confirmed evidence from the early colonial period for comparison.

Expertise Needed Archaeology and archaeometry, specifically residue and materials analysis of excavated still-like vessels.

Question posed in On Food and Cooking: The Science and Lore of the Kitchen, Harold McGee.

Coffee How far does coffee drinking or cultivation in Ethiopia predate the earliest 15th-century documented evidence from Yemen?

Open Coffee

Why It Is Open The popular account of coffee origin, a goatherd named Kaldi noticing his goats grow lively after eating coffee berries, was first put into writing in 1671 by Antoine Faustus Nairon, nearly a thousand years after Kaldi supposedly lived, and no earlier written trace of the story exists; it is folklore, not history. The earliest solid documentary and archaeological evidence for coffee drinking and cultivation as a prepared beverage instead comes from Sufi monasteries and coffeehouses in 15th-century Yemen. Coffea itself is native to the Ethiopian highlands, and Ethiopian oral tradition and later regional use are widely assumed to predate the Yemeni record, but no dated textual or archaeobotanical evidence currently closes the gap between the plant's native range and the first solid 15th-century documentation of it being deliberately cultivated and brewed.

What Would Settle It A dated archaeobotanical find of coffee cultivation or preparation in Ethiopia, or a textual reference to coffee drinking there, that predates the 15th-century Yemeni monastery and coffeehouse record.

Expertise Needed Archaeobotany and Ethiopian textual history

Question posed in History of Coffee (Encyclopaedia Britannica).

Kombucha Where and when did kombucha originate?

Open Kombucha

Why It Is Open Kombucha may have originated in the Bohai Sea region of China, but the history is not well documented. Popular legends locating its invention at the Qin dynasty imperial court, or crediting a Korean physician who supposedly brought it to Japan, are not supported by evidence and are treated by historians as apocryphal.

What Would Settle It A securely dated pre-19th-century written or archaeological record describing the fermented tea culture in China, or elsewhere, rather than the undocumented Bohai Sea attribution and the debunked Qin dynasty and Korea-to-Japan legends, would fix where and when kombucha began.

Expertise Needed Culinary history / food fermentation history

Question posed in Kombucha (Wikipedia), History.

Pina Colada Which bartender and establishment actually invented the pina colada?

Open Pina Colada

Why It Is Open Three competing accounts claim credit: the Caribe Hilton Hotel says Ramon 'Monchito' Marrero created it in 1954; a Spaniard named Ricardo Garcia also claims to have invented it in 1953 while working at the same hotel; and the Barrachina restaurant credits bartender Ramon Portas Mingot with creating it in 1963. No single account is universally accepted.

What Would Settle It A contemporary receipt, menu, newspaper mention or other primary record from 1953 to 1963 naming the drink at one specific San Juan establishment, rather than the competing later-recounted claims, would settle which bartender's account is accurate.

Expertise Needed Culinary history / hospitality-industry archival research

Question posed in Pina Colada (Wikipedia), Creation.

Vodka Did vodka originate in Poland or in Russia?

Open Vodka

Why It Is Open Both countries have long, independently developed vodka traditions and each treats the drink as a national invention; the earliest solid written record is Polish (1405), but Russian state production and taxation records are also very old and the surviving documentary trail on both sides is incomplete.

What Would Settle It A dated written or archaeological record of distillation for drink, rather than medicine, that clearly predates 1405 in either country would settle which tradition is older; short of that the question is likely to stay a matter of national narrative rather than documentary fact.

Expertise Needed Culinary history

Question posed in Vodka (Wikipedia), Lead section.

Whisky Did whisky distillation for drink begin first in Ireland or in Scotland?

Open Whisky

Why It Is Open Ireland's earliest documentary mention of whiskey (1405, Annals of Clonmacnoise) and Scotland's earliest documented evidence (1495, Exchequer Rolls entry for Friar John Cor) are roughly a century apart, but the practice of distillation is known to have spread to both Ireland and Scotland well before either surviving written record, so neither date can be treated as the true beginning.

What Would Settle It An earlier, securely dated documentary or archaeological record of distilled spirit production specifically for drink, in either Ireland or Scotland, than the two currently known.

Expertise Needed Documentary history and archaeology of distillation

Question posed in Whisky (Wikipedia), Lead section.

Martini What is the true origin of the martini cocktail?

Open Martini

Why It Is Open At least three competing accounts exist: descent from the Martinez cocktail served near San Francisco in the early 1860s, direct invention by a bartender in the town of Martinez, California, and derivation from the Italian Martini vermouth brand name. None is conclusively documented, and the earliest secure recipe under a related name (the Martinez Cocktail, 1887) does not settle which account, if any, is correct.

What Would Settle It A securely dated, unambiguous primary source using the name martini for this drink, or documentary evidence connecting Jerry Thomas's Martinez cocktail definitively to one bartender, bar or town.

Expertise Needed Cocktail and culinary history

Question posed in Martini (Wikipedia), Lead section.

Negroni Was the Negroni actually invented by Count Camillo Negroni in Florence, or did it originate in 1920s France?

Open Negroni

Why It Is Open The popular legend credits Count Camillo Negroni in Florence, generally dated around 1919, but no contemporary documentation of that story has been found. The earliest secured print attestations of a matching 1:1:1 recipe are French cocktail books from the late 1920s, under different names (Campari Mixte, Camparinete), with the name Negroni only attached in the late 1940s.

What Would Settle It A verified pre-1929 print source connecting the Negroni family or the city of Florence to this exact drink, or, alternatively, an even earlier French or Italian source confirming the drink's presence before the 1929 Alimbau and Milhorat cocktail book.

Expertise Needed Cocktail and culinary history

Question posed in Negroni (Wikipedia), Lead section.

Bubble Tea Which Taiwanese tea room actually invented bubble tea first?

Open Bubble Tea

Why It Is Open The Hanlin Tea Room in Tainan claims to have invented bubble tea in 1986; the Chun Shui Tang tea room in Taichung credits product-development staffer Lin Hsiu Hui with the idea in 1988. The two shops litigated the question for roughly a decade, and a 2019 Taiwanese court ruling declined to assign credit to either side, holding the drink an unpatentable general food product.

What Would Settle It A contemporaneous document, receipt, menu or press account from 1986 to 1988 naming tapioca-ball tea at one shop earlier than the other.

Expertise Needed Culinary and business history, Taiwan

Question posed in Bubble Tea (Wikipedia), Lead section.

Mead How far back does mead-making actually extend, and did it arise once or independently in multiple regions?

Open Mead

Why It Is Open Naturally fermented honey and water is easy to produce by accident, so mead may have been discovered independently by early humans in many places tens of thousands of years before written history. The earliest textual evidence (the Rigveda's soma, roughly 1700 to 1100 BCE) and the earliest strong archaeological evidence (pottery residue from northern China, at least 7000 BCE) are geographically and chronologically unconnected, and neither can be treated as the drink's true point of origin.

What Would Settle It Archaeological residue evidence, securely dated and geographically mapped, sufficient to distinguish a single point of origin from independent, unconnected invention in more than one region.

Expertise Needed Archaeology and archaeometry of fermented beverages

Question posed in Mead (Wikipedia), Lead section.

Nixtamalization How far back does nixtamalization actually reach in Mesoamerica?

Open Nixtamalization

Why It Is Open Equipment consistent with alkaline maize processing has been found on Guatemala's southern coast dating as early as 1200 to 1500 BCE, but the earliest DIRECT chemical confirmation, maize starch residue actually showing the alkaline treatment, has so far only been recovered from the Late Classic period, roughly 770 to 895 CE, at San Bartolo, Guatemala. The gap between equipment and confirmed residue leaves centuries of practice unproven either way.

What Would Settle It Starch-residue or isotopic analysis on cooking equipment from the Preclassic and Early Classic periods, closing the gap between the 1200 to 1500 BCE equipment horizon and the 770 to 895 CE residue-confirmed horizon.

Question posed in Encyclopaedia Britannica, archaeological literature on Preclassic-to-Classic period Mesoamerican maize processing.
