Dal puri

Breads, Flatbreads and Savory Pastries

Dal puri is a flatbread filled with legumes, classified as a type of roti, originating in South Asia and carried by Indian diaspora communities to the Caribbean and Mauritius. In the South Asian version, whole wheat dough is filled with chickpeas or lentils boiled with turmeric and seasoned with garam masala, then deep-fried until crisp and golden; the Caribbean dhalpuri and Mauritian dholl puri instead use white flour dough filled with split peas or chickpeas, flavored with cumin and turmeric, and are cooked on a flat griddle called a tava for a softer, less crisp result. It is eaten for breakfast in North India and sold as street food in the Caribbean and Mauritius, often wrapped around curry as a kind of sandwich.
