Spanakorizo is a Greek vegetarian pilaf of spinach and rice, considered a typical country dish that can be served hot or cold. It is made from long grain rice cooked with fresh spinach, dill, mint, onion, olive oil, salt and pepper, and is often finished with feta cheese and a squeeze of lemon. It is regarded as an emblematic dish of Greek home cooking.
