Curd rice, also called yogurt rice, is a South Indian dish of cooked rice mixed with plain yogurt, most closely associated with the cuisines of Tamil Nadu, Kerala, Karnataka, Telangana and Andhra Pradesh, though closely related versions are eaten across Rajasthan, Gujarat and Maharashtra. The rice is steamed or pressure cooked soft, then combined with yogurt and a tempering of spices such as green chillies, ginger and curry leaves. It carries many regional names, including tayir sadam in Tamil Nadu, mosaranna in Karnataka, perugannam in Telangana and Andhra Pradesh, dahi bhaat in Maharashtra, and dahi chunka bhaata in Odisha.
