Tahchin

Rice, Grain and Starch Dishes

Tahchin, or tahcheen, is an Iranian rice dish made primarily of rice, yogurt, eggs, saffron, and various meats; the name translates from Persian as arranged on the bottom. It generally consists of a thick, saffron-flavored crust called tahdig, often mixed with cooked red meat or chicken, topped with a layer of plain rice, though the plain rice layer can be omitted to produce a molded tahchin.
