Phirni

Rice, Grain and Starch Dishes

Phirni, also called firni, is a rice pudding dessert made from ground rice, rice flour or cornflour cooked in milk, flavored with spices such as cardamom, saffron and rose water and garnished with nuts, rose petals and vark. It is eaten chilled, traditionally served in clay bowls called shikoras, and is found across the Indian subcontinent as well as in variant forms in the Middle East, Iran and Afghanistan. Its name derives from the Persian word firni, meaning rice pudding, and its origins in India trace to the Mughal era, when it served as a royal dessert.
