Tuwon shinkafa

Rice, Grain and Starch Dishes

Tuwon shinkafa is a rice swallow eaten in Niger and the northern part of Nigeria, made by mashing cooked rice with water into a thick, sticky pudding that is rolled into spherical portions and served hot. It is typically eaten alongside soups such as miyan kuka or miyan taushe. Related swallows made from other grains include tuwon masara, made from maize, and tuwon dawa, made from sorghum, and a similar dish in Ghana is known as omo tuo or molukple.
