Umngqusho

Umngqusho is a South African dish based on samp and sugar beans, traditionally served with hard body chicken called umleqwa in isiXhosa. Traditionally a Xhosa staple meal, it has since been adopted by other South African peoples, who refer to it as isitambu, meaning stamped corn, among the Zulu. The Xhosa version, served with butter or fat, was reportedly Nelson Mandela's favourite dish.
