Giouvetsi, also spelled yiouvetsi or youvetsi, is a Greek dish made with chicken, lamb, or beef and pasta, most often kritharaki (orzo) or hilopites, cooked in a tomato sauce. Other common ingredients include onions or shallots, garlic, beef stock, and red wine. The dish is characteristically baked in a clay pot called a guvec and served with grated cheese.
