Bourekas are a widely eaten baked turnover in Sephardic Jewish and Israeli cuisine, a variation on the wider burek family of pastries. They developed after Sephardic Jews, expelled from Spain and given refuge in the Ottoman Empire, combined Ottoman pastry traditions with the empanada baking they had known before. Bourekas are usually made from puff pastry, phyllo or brik pastry and filled with ingredients such as feta cheese, potato, spinach or meat, then sealed, brushed with egg wash, topped with seeds or seasonings and baked.
