Ghormeh sabzi, meaning preserved meat in fat with leaf vegetable, or khoresht sabzi, is a traditional Persian herbal stew considered the national dish of Iran and one of its most commonly served dishes. It has different regional variants that are mainly distinguished by the type of beans and meat used.
