Boodog is a Mongolian dish of goat, mutton or Tarbagan marmot barbecued with stones heated in a fire and inserted directly into the animal's body cavity. The carcass is boned and gutted through a small incision at the neck while the skin is left whole, then packed with the hot stones along with vegetables, onions and salt; the outside is repeatedly squeezed so the stones inside cook the meat through contact alone, and the skin is singed to remove the hair once the meat is done. It is prepared for special occasions, with marmots typically hunted in autumn when they are largest ahead of hibernation, and is considered a more egalitarian dish than some other Mongolian meat preparations, generally shared among household members or campmates.
