Lychee pork

Roasted, Grilled and Fried Dishes

Lychee pork, or lizhi rou, is a dish of Fujianese cuisine made from small pieces of deep fried pork and sliced water chestnuts served in a sweet and sour sauce. Its bright red color comes from red yeast rice, though in lower end restaurants the sauce is more commonly made with ketchup, soy sauce and rice vinegar. The name refers to the way the fried, scored pork pieces curl to resemble the fruit, not to the presence of lychee itself.
