Caragols a la llauna

Roasted, Grilled and Fried Dishes

Caragols a la llauna is a Catalan dish of land snails, usually garden snails, cooked over a grill or in a flat tin pan called a llauna. The snails are starved for about a week to clean them out, washed, and then cooked over fire or in an oven, sometimes with bacon or melted lard added in regional versions. They are served with bread and a dipping sauce such as aioli, and eaten by hand with a toothpick or fork, most often as a springtime dish in Catalonia.
