Cuchifritos

Roasted, Grilled and Fried Dishes

Cuchifritos, also spelled cochifritos, refers to various fried foods made principally of pork in Spanish and Puerto Rican cuisine. The Spanish version, typical of Segovia in Castile, consists of pork fried in olive oil with garlic, while the Puerto Rican version is broader, including blood sausage, fried potato balls with meat filling and pork skin preparations, with cooking plantain used in some versions. Vendors selling cuchifritos often also serve tropical juices such as passionfruit, pineapple and coconut, and the sesame based drink ajonjoli.
