Čvarci are a food of Central and Southeastern Europe, a variant of pork cracklings that forms as a by-product of rendering lard rather than as an intended product on its own. When pig fat is trimmed and melted down to make lard, the solid, mostly skin and connective tissue that remains after straining is salted and eaten as čvarci. They are found across Serbia, Bosnia, Croatia, Slovenia, Romania, Bulgaria and North Macedonia, as well as in Poland, the Czech Republic, Slovakia, Austria, Hungary, Ukraine and Belarus, usually homemade though also sold at farmers markets.
