Huevos Rotos

Roasted, Grilled and Fried Dishes

Huevos rotos, or huevos estrellados, are Spanish dishes of eggs fried in a generous amount of olive oil or other oil. In Madrid, huevos estrellados typically means a pan fried egg with a liquid yolk served over French fries, or in some modern versions chips, along with a meat such as ham, bacon or a sausage like chorizo or chistorra, and the dish is served hot immediately after plating.
