A lemon bar, also called a lemon square, is an American dessert bar consisting of a thin shortbread crust topped with a lemon curd filling, usually made with butter, sugar, flour, eggs, salt and fresh lemon juice and finished with a dusting of confectioners' sugar. The first widely documented recipe appeared in the Chicago Daily Tribune on August 27, 1962, submitted by Eleanor Mickelson, though similar recipes had circulated earlier in community cookbooks. It combines two older traditions, English lemon curd and Scottish shortbread, into a dessert now common at American gatherings.
