Porchetta

Roasted, Grilled and Fried Dishes

Porchetta is a savory, fatty and moist boneless pork roast of Italian culinary tradition. The carcass is deboned and then spitted or roasted, traditionally over wood for at least eight hours with the fat and skin left on, and in some traditions it is stuffed with liver and wild fennel, though many versions omit stuffing. It is usually heavily salted and can be seasoned with garlic, rosemary, fennel or other herbs, and it has been recognized by the Italian Ministry of Agricultural, Food and Forestry Policy as a prodotto agroalimentare tradizionale, a traditional food product of cultural relevance.
