Lula kebab

Roasted, Grilled and Fried Dishes

Lula kebab is a skewered kebab of minced meat that is a specialty of Armenian and Azerbaijani cuisine from the South Caucasus. It is made by grinding soft mutton with onion, at a ratio of about 400 grams of onion per kilogram of meat, then mixing in pepper and salt, chilling the mixture for about an hour, molding it around a skewer and grilling it over a coal barbecue called a mangal for ten to fifteen minutes. It is typically served hot, wrapped in lavash bread, sometimes garnished with sumac.
