Mirza ghassemi

Roasted, Grilled and Fried Dishes

Mirza ghassemi is an Iranian dish from Gilan province in northern Iran, near the Caspian Sea, served as an appetizer or main course. It is made from grilled or tandoori aubergine seasoned with garlic, tomato, oil or butter, salt and pepper, then bound together with eggs; a variant called kadoo ghasemi substitutes zucchini for the eggplant. The dish can be prepared as a casserole and is usually served with bread or rice. It is said to have been invented by Mohammad Qasim Khan, governor of Rasht under Nasser al-Din Shah, who popularized it across Gilan and later in Fars province.
