Tulumba, also known as tolomba, balah ash-shaam or bamiyeh, is a deep-fried dessert found in Egypt, the Levant, Greece and the regional cuisines of the former Ottoman Empire, comparable to jalebi and churros. It is made by piping unleavened choux pastry dough into short lengths with a star-tipped pastry bag, deep-frying it until golden, and pouring hot sugar syrup over the fried pastry.
