Crab cake

Roasted, Grilled and Fried Dishes

A crab cake is a popular American fishcake made from crab meat combined with bread crumbs, mayonnaise, mustard, eggs and seasonings, and cooked by sauteing, baking, grilling, deep frying or broiling. The dish is closely associated with the Chesapeake Bay region of Maryland, where the traditional preparation uses jumbo lump meat from steamed blue crabs with a minimal binder and spices such as Old Bay, formed into cakes, chilled to firm up, and then briefly fried or broiled. Crab cakes are also common along the wider Mid Atlantic coast and appear in New England, the South Atlantic, the Gulf Coast, the Pacific Northwest and Northern California, where Dungeness crab is a popular alternative to the traditional blue crab.
