Huli-huli chicken is a grilled chicken dish of Hawaiian cuisine, created in 1955 by Ernest Morgado and Mike Asagi after they founded the Pacific Poultry Company. The chicken is barbecued on a revolving spit over mesquite wood and regularly basted with a sweet huli-huli sauce made from ingredients such as pineapple, ginger, soy sauce, ketchup, sugar, sesame oil and garlic. Its name comes from the Hawaiian word huli, meaning turn, which onlookers would call out when the chickens needed rotating; Morgado trademarked the name huli-huli in 1967 and began bottling the sauce commercially in 1986, and the dish became a popular fundraiser meal across Hawaii.
