Sweet and sour pork is a Cantonese and Chinese American dish of fried pork combined with a sweet and sour sauce, typically served with vegetables and sometimes pineapple. It originated in Cantonese cuisine in Guangdong during the eighteenth century and became popular in the United States in the early twentieth century following Chinese immigration, particularly among railroad workers, and the dish is often cited as an example of how Chinese immigrant cooking adapted to Western tastes while keeping its essential character.
