A tostada is a Mexican and Guatemalan dish based on a flat or bowl-shaped corn tortilla that has been deep-fried or toasted, eaten on its own or used as a base for other foods. Common toppings include beans, cheese, sour cream, lettuce, onions and salsa, often finished with seasoned meat such as chicken, pork or beef, or with seafood such as tuna, shrimp, crab or ceviche. Tostadas trace back to Mesoamerica and remain a staple across Mexico and the American Southwest; Oaxaca is known for a large variety called tlayuda, sometimes described as pizza-sized and topped with fried grasshoppers, while Guatemalan tostadas are typically prepared with black beans, parsley, ground beef and curtido.
