Bombay potato

Roasted, Grilled and Fried Dishes

Bombay potato, also called Bombay potatoes or aloo Bombay, is an Indian dish of cubed potatoes that are parboiled, then fried and seasoned with spices including cumin, curry, garlic, garam masala, turmeric, mustard seeds, chili powder, salt and pepper. Some recipes add onion, tomatoes or tomato sauce, and the dish is served as either a main course or a side dish.
