Chicken tikka

Roasted, Grilled and Fried Dishes

Chicken tikka is a boneless chicken dish from the Indian subcontinent, eaten across India, Pakistan, Bangladesh and the South Asian diaspora. Pieces of chicken are marinated in yogurt and spices, including ginger, garlic, red chili powder and lemon juice, then cooked in a tandoor oven, traditionally basted with ghee and fanned while cooking to build flavor. The dish traces to Mughal-era cuisine, said to have developed under Emperor Babur's reign in the early sixteenth century by combining the Central Asian tandoor with the Persian practice of marinating meat in yogurt and Indian spicing. It is commonly served with coriander and tamarind chutney, onion rings and lemon, or used as the base for chicken tikka masala.
