Ayam Taliwang

Roasted, Grilled and Fried Dishes

Ayam Taliwang is a spicy Indonesian grilled chicken dish, or ayam bakar, originating in Taliwang on the island of Lombok in West Nusa Tenggara, rooted in the culinary tradition of the Sasak people though its modern form is credited to Abdul Hamid in 1970. The chicken is partially grilled, tenderized with a pestle, dipped in oil and coated with a spicy sauce of garlic, chili and shrimp paste before final frying or grilling, producing a sweet and spicy sambal coating. It is commonly served with water spinach known as pelecing and chili covered eggplant known as beberuk.
