Betutu is a traditional Balinese poultry dish of steamed or roasted chicken or duck coated in a spice paste called bumbu betutu, made from finely ground shallots, garlic, turmeric, ginger, wild ginger, galangal, candlenuts, chili peppers, shrimp paste and peanuts sauteed in coconut oil. It originates from Bali and Lombok in Indonesia, where it is called ayam betutu when made with chicken and bebek betutu when made with duck, and today it appears on menus at hotels and restaurants across Bali. Regional preparations vary: in Klungkung and Karangasem the poultry is stuffed with spices, in Gianyar it is wrapped in plantain leaves, and the Gilimanuk version is notably spicier.
