Bopis

Roasted, Grilled and Fried Dishes

Bopis is a Filipino dish of pork or beef lungs and heart, finely chopped and sauteed with tomatoes, chilies, and onions into a piquant, crispy preparation, further cooked with garlic and pepper. Its name carries Spanish heritage, from the word bopiz, though the original meaning and even the region where the dish first developed have been lost. Bopis is served either as pulutan, food eaten alongside alcoholic drinks, or as a main course with rice, and recipes vary from region to region and family to family in their exact ingredients and spicing.
