Gepuk, also called empal gepuk or simply empal, is a sweet and spicy fried beef dish from Sundanese cuisine in West Java, Indonesia, though it is eaten across the island of Java as a main course. It is typically made from beef shank, which is boiled to medium-well doneness, cut thickly along the muscle fibers into palm-sized pieces, then beaten gently with a stone pestle and mortar to loosen the fibers and increase surface area. The meat is cooked in a spice blend of ground shallots, garlic, chili peppers, coriander and palm sugar mixed with bruised lemongrass, galangal, bay leaf, coconut milk and turmeric water until the stock evaporates and the flavors are absorbed, then fried in coconut oil until darkened. It is served topped with fried shallots alongside steamed rice.
