Rempeyek

Roasted, Grilled and Fried Dishes

Rempeyek is a deep fried savory Indonesian Javanese cracker made from a rice flour batter that binds granular ingredients such as peanuts and dried anchovies or shrimp into a crisp sheet; its name comes from a Javanese word imitating the sound of a crisp cracker breaking. The batter is typically flavored with ground candlenuts, coriander, and salt, sometimes with citrus leaves, and mixed with coconut milk before the peanuts or seafood are added and the mixture is deep fried in hot coconut oil until golden and crisp. Rempeyek is closely associated with Javanese cuisine but is now eaten throughout Indonesia, and it spread to Malaysia following Javanese immigration in the early nineteenth century; it is also found in the Netherlands and Suriname, both home to significant Indonesian communities.
