Tortang talong, also known as eggplant omelette, is a dish from Filipino cuisine made by pan frying whole grilled eggplants that have been dipped in a beaten egg mixture. It is a popular breakfast and lunch dish in the Philippines, and a common variant, rellenong talong, is stuffed with meat, seafood or vegetables before frying.
