Burrito

Salads, Dips, Sandwiches and Fermented Cold Dishes

A burrito is a dish of a flour tortilla wrapped around a filling, sealed into a cylindrical shape distinct from an open taco. The name means little donkey in Spanish, a diminutive of burro. The form developed in northern Mexico, particularly around Ciudad Juarez, though its exact origin is unclear; it became established as a Mexican regional name for what other areas called a taco. Burritos entered American restaurant menus in the 1930s, with El Cholo Spanish Cafe in Los Angeles credited as an early adopter. Fillings commonly include beef, chicken or pork, rice and beans, lettuce, tomatoes, cheese, and condiments such as salsa, guacamole and sour cream. The tortilla is often lightly grilled or steamed before filling so it becomes pliable enough to wrap tightly and seal, allowing the burrito to be eaten by hand. FAQs

Why is a burrito called a little donkey?

It is the Spanish diminutive of burro; one explanation traces it to a Sonoran joke about donkey meat.

The word burrito means little donkey in Spanish, the diminutive form of burro. Sonoran historian and politician Horacio Sobarzo Díaz explained that the term began in Sonora, where some dubious taco stands sold donkey meat instead of beef and people maliciously called tacos burritos. Another possible origin is that burritos tend to contain a lot of different things, much as a donkey can carry a large burden.
