Peruvian ceviche

Peruvian ceviche, also spelled cebiche, sebiche, or seviche, is a traditional dish widely eaten in Peru, especially along the countrys coastal region. It is eaten throughout the year but is served most often in summer for its refreshing, cold taste, and it is also a common dish for celebrations such as Fiestas Patrias. Perus own version of the dish is distinguished by a preparation using lime juice, fish, sweet potatoes, and other ingredients, giving it a distinct and unique character.
