Crudités are French appetizers of sliced or whole raw vegetables, such as celery, carrot and cucumber sticks, bell pepper strips, broccoli, cauliflower, radish, fennel, baby corn and asparagus, typically dipped in a vinaigrette or other sauce such as bagna cauda or pinzimonio. The French word means raw things, and the term entered English use around 1960.
