Drunken shrimp

Drunken shrimp is a dish popular in parts of China made from freshwater shrimp immersed in alcohol, typically rice wine, and eaten cooked or raw, the alcohol being the source of the name of the dish. It is particularly associated with Shaoxing cuisine, and preparation varies by region: some cooks soak the live shrimp in alcohol before boiling them, others marinate already cooked shrimp in alcohol afterward, and some submerge the shrimp in a bowl of rice wine to let them expel waste before eating.
