Steak tartare

Salads, Dips, Sandwiches and Fermented Cold Dishes

Steak tartare, also called tartar steak, is a French dish of raw ground beef. It is usually served with onions, capers, parsley or chive, salt, pepper, Worcestershire sauce and other seasonings presented separately so they can be added to taste, and it is commonly topped with a raw egg yolk. The dish belongs to a wider family of raw meat preparations found across several cuisines, including Piedmontese battuta al coltello, Levantine kibbeh nayyeh, Ethiopian kitfo, Turkish çiğ köfte, German Mett and Korean yukhoe.
