Pizza Rossini is a pizza from Pesaro, in Italy's Marche region, made with a base of tomato puree and mozzarella that, once baked, is topped with sliced hard-boiled eggs and a layer of mayonnaise. It was created at a local pastry shop around the turn of the 1960s, originally as something to accompany an aperitif, and is named for the composer Gioachino Rossini, who was born in Pesaro. Its local popularity led other pizzerias in the city to add it to their own menus, and it is now considered one of Pesaro's characteristic dishes.
