Spaghetti bolognese is the name commonly used outside Italy for spaghetti served with a ragu inspired by ragu alla bolognese, the slow cooked meat based sauce native to Bologna. In Italy itself ragu alla bolognese is not paired with spaghetti but with flat pasta such as tagliatelle, and it is prepared by sweating and sauteing a soffritto of onion, celery and carrot with minced beef and pork, then braising it with white wine, milk and a small amount of tomato. Outside Italy the phrase spaghetti bolognese often describes a simpler tomato based meat sauce that bears little resemblance to the true Bolognese ragu, but the pairing has nonetheless become a popular dish in its own right, particularly in Anglophone countries.
