Bozbash is a meat stew, also served as a soup, found in Armenian, Azerbaijani and Iranian cooking. It is made by simmering meat, usually lamb, with red or white beans, green vegetables, herbs such as parsley and mint, onions, leeks, dried limes and spices including salt, pepper and turmeric over low heat for several hours, after which the solids are often removed and mashed, with the broth and the mashed pulp served separately alongside flatbread and pickled vegetables. The name is thought to come from Azerbaijani words for light gray and head, describing the dish's appearance once cooked, and it takes many regional forms, including Armenian versions flavored with quince and apple and Azerbaijani versions built around meatballs, kufta, or chunks of meat, tika.
